Wholemeal spelt flour

This reference is obtained by cryogenic whole-body milling of whole spelt, including therefore, the bran and germ. This determines its healthful nutritional characteristics, and it already complies with the provisions regarding "true whole grain." In addition to the commercial claims, the semi-finished product has the typical dark speckling, so it gives a "raw," rustic, homemade look to the finished product, as well as the strong exotic appeal that places it among the grains of highest prestige by consumers. Milling with liquid nitrogen, limits oxidative phenomena and the occurrence of bad odors, due to the oxidative preservation of the fatty part contained in the germ.
