The oil obtained from the decanting process, which might appear turbid due to a natural solid residue still contained, is stored in stainless steel silos by using nitrogen. Nitrogen will prevent any oxidation while the oil is stored.

Olive Oil Extraction
Transformation
Olive oil is produced using the "Pieralisi" mechanical crushing plant, minimizing oxidation. The "gramola" separates the oil from the paste at low temperatures. Subsequently, a decanter separates the liquid must from the residual "sansa" and water. Finally, centrifugal separators complete the separation of the oil from the residues. This cold process preserves quality by reducing peroxide formation and maintaining the natural components of the olives.

Production
After being weighted, the drupes are placed in numbered plastic bins. The bins ensure proper aeration of the olives to protect them from temperature problems or mould.

Technical operations in the olive groves
Production
During the vegetative rest of the olive trees, pruning is carried out to promote growth. Breaking the herbaceous layer aerates the soil, phytosanitary measures prevent the olive fruit fly, and mechanical interventions eliminate weeds, fostering plant health and soil well-being.
